Comber Earlies Potato Salad
Why not use your new season Comber Earlies to try the classic dish, potato salad, always a favourite to accompany your salads this summer.
Method
1. Wash and scrub potatoes
2. Place in a steamer over a pan of water.
3. Drain the potatoes and leave to cool.
4. Place the cooled potatoes in a bowl with the scallions, mayonnaise, salad cream, half of the white pepper and the salt. Stir everything together to combine.
5. Taste and add a little more seasoning if needed.
6. Cover and refrigerate for at least 30 minutes (up to a day) before serving.
7. Just before serving sprinkle with chopped chives and a little black pepper if you like.
Cooking time 45 minutes
Ingredients
5 medium-sized New season potatoes - Comber Earlies or Queens are ideal.
6 Scallions or a bunch of Chives and chopped very finely
6 tbsp full-fat mayonnaise
3 tbsp full-fat salad cream
1/4 tsp white pepper - this is a must - it can't be replaced with black pepper
Pinch of salt
1 tbsp chopped fresh chives - optional to garnish
Pinch of black pepper - optional
