At its heart is Paul Cunningham, acclaimed chef, expert forager, and Northern Ireland's representative on Great British Menu 2021, whose passion for zero-waste cooking and wild food shines through every course.

Your evening begins in the magical setting of the Glasshouse with a botanical infused cocktail , before sitting down to a thoughtfully curated multi-course feast. Each dish is paired with wines that enhance the natural flavours and tell a story of place and provenance.
