Raspberry and Rose Fool
Ingredients:
450g fresh raspberries
600ml of double cream - softly whipped. Pillow like - NOT stiff.
Papa’s Raspberry and Rose Cordial
1 tablespoon icing sugar
Pink rose petals - one head is fine
Fresh mint leaves.
Method:
Reserve a few raspberries, mint leaves and some pink rose petals to decorate.
Lightly mash the rest of the raspberries but not too much. You still want to have some texture. Add 1 tablespoon of the raspberry and rose cordial.
Spoon a little of the raspberry mixture into the bottom of a glass serving
bowl.
Gently stir the cream into the rest of the raspberries with the icing sugar. I
like it to be marbled and not completely mixed - its prettier.
Spoon this on top of your raspberry mix. Drizzle over some more cordial and decorate with the remaining raspberries.
Serve with a delicious biscuit from Fjord Bakery. Use it to scoop the fool into your mouth!
Lavender and Strawberry Ice Cream Soda and Raspberry and Rose Ice Cream Soda
Ingredients:
Papa’s Lavender Soda
Papa’s Raspberry and Rose Soda
5 strawberries
5 raspberries
Method:
Glastryfarm Strawberry Ice Cream and Glastry Farm Raspberry Ice Cream
(just small pots)
2 x Raspberry and White chocolate Jumbo Mallows
Pour some Lavender Soda half way up a tall glass. Pour some Raspberry
and Rose Soda halfway up in another tall glass.
In the Lavender Soda - drop in a couple of sliced strawberries. In the
Raspberry and Rose Soda - drop in a couple of raspberries.
Scoop some Strawberry ice cream into the Lavender Soda
Scoop some Raspberry ice cream into the Raspberry and Rosewater Soda.
Top with more fruit and sliced mallows. Serve with straws and spoons!
